  • 5 links of sweet or mild Italian sausage

  • pounds red potatoes (halved or quartered)

  • 3 garlic cloves, sliced

  • ½ tsp dried thyme

  • ½ tsp dried oregano

  • ¼ tsp cayenne pepper

  • ½ tsp black pepper

  • 1 tsp salt

  • 3 tbsp olive oil

  • Fresh flat-leaf parsley, chopped (for garnish)

Instructions

  1. Preheat oven or grill to 425°F.

  2. Prepare Potatoes: In a bowl, toss potatoes with sliced garlic, thyme, oregano, cayenne, black pepper, salt, and 2 tbsp olive oil.

  3. Oil the Pan: Drizzle 1 tbsp olive oil on a rimmed baking sheet and spread evenly.

  4. Arrange Potatoes: Place potatoes cut-side down on the sheet for maximum crispiness.

  5. Add Sausages: Lightly coat sausages with leftover seasoning mix. Nestle them between the potatoes.

  6. First Roast: Bake or grill for 20 minutes.

  7. Flip Everything: Turn sausages and potatoes over for even browning.

  8. Final Roast: Return to oven/grill for another 15 minutes.

  9. Garnish and Serve: Sprinkle with chopped parsley and serve warm with bread or salad.
