5 links of sweet or mild Italian sausage

1½ pounds red potatoes (halved or quartered)

¼ tsp cayenne pepper

3 tbsp olive oil

Instructions

Preheat oven or grill to 425°F.

Prepare Potatoes: In a bowl, toss potatoes with sliced garlic, thyme, oregano, cayenne, black pepper, salt, and 2 tbsp olive oil.

Oil the Pan: Drizzle 1 tbsp olive oil on a rimmed baking sheet and spread evenly.

Arrange Potatoes: Place potatoes cut-side down on the sheet for maximum crispiness.

Add Sausages: Lightly coat sausages with leftover seasoning mix. Nestle them between the potatoes.

First Roast: Bake or grill for 20 minutes.

Flip Everything: Turn sausages and potatoes over for even browning.

Final Roast: Return to oven/grill for another 15 minutes.
