For the RFD Sauce:

  • ½ cup mayonnaise

  • ⅓ cup ketchup

  • 2 tbsp sweet pickle relish

  • 1 tbsp finely chopped onions (optional)

  • 1 tsp Dijon mustard

  • Pinch of salt

  • Dash of garlic powder

  • 23 dashes of Chipotle Tabasco

For the Smash Burgers:

  • 1 lb ground beef (80/20)

  • Kosher salt, to taste

  • 4 slices American cheese

  • 2 brioche buns, buttered

  • Sweet and spicy pickles (optional)

Instructions

  • Prepare the Sauce:
    In a mixing bowl, whisk together all sauce ingredients until smooth. Refrigerate for at least 30 minutes.

  • Form the Patties:
    Divide the beef into 4 equal portions and shape into loose balls. Do not overpack.

  • Heat the Skillet:
    Preheat a flat-top or cast-iron skillet to 400°F until it lightly smokes.

  • Smash and Season:
    Place two balls on the skillet. Let cook for 20 seconds, then smash flat with a heavy spatula or muddler. Season with salt.

  • Cook and Flip:
    Cook each side for about 2–3 minutes until a crispy crust forms. Flip and immediately add a slice of cheese to each patty.

  • Toast the Buns:
    While the second side cooks, toast the buttered buns until golden.

 

  • Assemble:
    Spread RFD sauce on the bottom bun. Stack both cheesy patties, top with pickles, and cover with the top bun spread with more sauce.

Notes

  • For a clean smash, use parchment paper between spatula and beef.

  • The sauce gets better the longer it chills.

 

  • Add jalapeños or pimento cheese for a flavorful twist.
