A cozy French-inspired baked dish made with thinly sliced potatoes, creamy garlic white sauce, and layers of bubbling cheese. This version adds a flavorful twist with herbs and extra melty cheddar. Perfect as a hearty side or comfort-filled main.

Ingredients

3 tbsp butter
1 tbsp garlic paste
1½ tbsp all-purpose flour
1½ cups milk
½ tsp black pepper
Salt to taste
4 tbsp soft cheddar cheese (divided)
4 medium potatoes, thinly sliced (2mm)
1 tsp dried oregano, crushed
1 tbsp chopped chives (plus more for garnish)
Pinch of chili flakes (optional)

Instructions

Step 1: Preheat oven to 320°F (160°C).
Step 2: In a pan, melt butter over medium heat. Add garlic paste and cook for a few seconds.
Step 3: Stir in flour and cook until lightly golden. Slowly whisk in milk, breaking up any lumps.
Step 4: Simmer until the sauce thickens, about 4–5 minutes. Add pepper, salt, and 2 tbsp cheese. Stir until melted and smooth.
Step 5: Soak the potato slices in salted water for 10 minutes, then drain and pat dry.
Step 6: Mix the creamy sauce with potatoes. Add crushed oregano and chopped chives.
Step 7: In a buttered baking dish, layer the potatoes, spooning extra sauce between every two layers.
Step 8: Bake for 25 minutes. Remove from oven, top with remaining cheese, and bake for another 5–7 minutes until golden and bubbling.
Step 9: Garnish with fresh chives and a pinch of chili flakes. Let rest 5–10 minutes before serving.

Notes

For extra depth, try adding Dijon mustard to the sauce
Use a mandoline for evenly sliced potatoes
Can be prepped ahead and baked just before serving
